Yummy!

I made this this weekend and OMG it’s the bestest chicken EVAH!!!!!First I’ll post the original recipe, then how I really did it.

INGREDIENTS

  • 2 tablespoons creamy peanut butter
  • 1/2 cup soy sauce
  • 1/2 cup lemon or lime juice
  • 1 tablespoon brown sugar
  • 2 tablespoons curry powder
  • 2 cloves garlic, chopped
  • 1 teaspoon hot pepper sauce
  • 6 skinless, boneless chicken breast halves – cubed

DIRECTIONS

  1. In a mixing bowl, combine peanut butter, soy sauce, lime juice, brown sugar, curry powder, garlic and hot pepper sauce. Place the chicken breasts in the marinade and refrigerate. Let the chicken marinate at least 2 hours, overnight is best.
  2. Preheat a grill to high heat.
  3. Weave the chicken onto skewers, then grill for 5 minutes per side.

  • 1/2 cup low-sodium soy sauce (You can also use Tamari which personally I don’t like)
  • 1/2 cup lemon or lime juice
  • 2 tablespoons curry paste (I can’t FIND powder around here)
  • 1 teaspoon hot pepper sauce
  • 6 skinless, boneless chicken breast halves – cubed

FYI I nuked the peanut butter, sauce mix for a minute or two to soften up the PB.

I actually used precut chicken breast tenders–two packages so 2-3 pounds because I knew I wanted extras and I didn’t cube them but threw them on the grill like they were.  Not sure how authentic this is but OMG it’s SO GOOD!

    I’ve been dying to try this recipe since I read it here, then today I was like … where was that? Where did I read it?

    And I panicked until I found it again. Am so happy now, and this time I’m remembering to bookmark it.
